WHAT ARE TRUFFLES?

A large number of bulbous mushrooms, mostly growing underground, are colloquially known as truffles, a distinction being made between real and false truffles. The genus Tuber, to which the truffles belong in the narrower sense, denote some of the most expensive and culinary most valuable mushrooms.

The word "truffle" goes back to the French origin "truffle" and this word in turn comes from the Latin language with the word "tuber", which means something like bump or swelling. From German, the word has spread into Danish (“trøffel”) and Swedish (“tryffel”). The grammatical gender of the word varies between masculine and feminine and thus also its plural form (if masculine, truffle as in the singular, if feminine, truffle).

The first references to the truffle go back to the year 3000 BC and have their beginning in Mesopotamia. Since then, the delicacy has become so popular with gourmets that the most adventurous assumptions about the origin and life of the precious tuber have been made.

An older name for truffle is nut mushroom. Other old names are Erdmorgeln, Erdschwämme, Grieblinge and peanuts.

Truffles are used more as a spice, rarely in large quantities.

Proper storage of truffles

If you want to store your truffles for a short time, please note the following:

Black truffles should be carefully cleaned with a brush. You can then store them in a closed terracotta jar for up to 10 days.

White truffles can only be stored for two to seven days. Wrap the truffles in air-permeable paper and place them in a glass jar and then in the vegetable compartment of the refrigerator. Change the paper once or twice a day. If you prefer a different method then wrap the truffles in paper and store in rice. The truffles give their taste to the rice. In this way, storage can take place for one to two days.

If you want to store your truffles for a long time, we recommend the following method:

Black truffles should be placed in lukewarm water for a quarter of an hour and then brushed off thoroughly. Put the truffles in a glass jar, seal it and sterilize it in a water bath for three hours.
